In the past I’ve visited Cheddar’s Scratch Kitchen to indulge in juicy burgers but this summer the restaurant began introducing a wide array of tropical inspired drinks and dishes for their Passport to Summer. Jacqueline and I stopped by one day for a late lunch and enjoyed some and-crafted island favorite cocktails and summer inspired menu items.
What portrays summer fun more than a piña colada? Cheddar’s Piña Colada comes with Appleton Estate Signature Blend rum, real fruit puree, a splash of sweet & sour and topped off with Myers’s Original Dark rum. While the drink itself was refreshingly delicious, I loved the garnish of a toasted coconut rim and fresh pineapple wedge.
Jacqueline’s tropical drink of choice was the Maui Margarita – a half strawberry, half mango marg accented with kiwi and a shot of DeKuyper cactus juice on the side.
I love mangos and was immediately drawn to the Grilled Tilapia and Shrimp with Mango Salsa. The seafood combo is served over rice with two sides and Jacqueline and I decided on broccoli and fries. All about that balance!
Next on the menu was the Sweet Heat Chicken & Shrimp. The chicken and shrimp was generously glazed with mango chili sauce and served over ginger rice and a tomato herb salad on the side.
