One of my favorite breakfast bowls is Vanilla Quinoa Oatmeal topped with an assortment of fruit, local honey, almonds, and more. The first time I came across this tasty dish I was out west in Marfa for Mobile Om’s yoga retreat. After our morning yoga we were served a bowl of oatmeal topped with figs, coconut shreds, almonds, and I was instantly in lust.

What else goes well with quinoa oatmeal? Crisp, sweet apples. This weekend we collabed with Envy Apples to recreate my favorite breakfast (or lunch) bowl!

Vanilla Quinoa Oatmeal

  • 1 cup vanilla almond milk
  • 1/2 cup quinoa
  • 1 teaspoon cinnamon
  • 1 Envy Apple
  • handful of your favorite berries
  • handful of almonds
  • 2 teaspoons of chia seeds
  • 2 teaspoons of local honey

To make, cook the vanilla almond milk, quinoa and cinnamon over medium heat until boiling. Once boiling, reduce heat to low and simmer with top on for 13-15 minutes. Once all the milk has evaporated, serve in your favorite bowl with a sliced Envy Apple, berries, almonds, chia seeds and local honey. Serve with some hot coffee and enjoy!
